This year I have decided that as part of my January goals I want to juice everyday for my health and to help rehabilitate my thyroid.  Part of that goal means sharing my juices with you folks as a way for me to be held accountable.

I have also been working out again because I have had the energy and my muscle pain and aching has been minimal.  Hypothyroidism pretty much sucks when you know how your body is supposed to feel.  By flooding my body with easily digestible nutrients I plan to get back to my healthy, fit vegetarian self.

It makes the perfect addition to a balanced breakfast!

Ever since I started juicing again I've become obsessed with green juices.  They are loaded with nutrients and when done correctly are lower in sugar because you are using mostly greens.  I've tried a lot of different combinations and basically just throw whatever I have in my refrigerator when the morning comes.

I've been reading about wheat grass and have been intrigued on adding it to a green juice.  I've read that it can be difficult to juice so I thought I would try the powder.  When I was at the store I didn't want to commit to a massive tub of this powder so I bought a couple packets to experiment with.  The end result was a grassy taste that I don't mind to much.  This mean green juice is just that...mean.  It is not for those that do not like green juice or have never tried juicing a lot of greens.

Mean Green Juice with Wheat Grass Powder

  • 1/2 cucumber
  • 3 celery ribs
  • 1 small apple (I used a fuji)
  • 2 cups spinach
  • 3 kale leaves
  • handful fresh mint
  • 1/2 wheat grass packet

  • Juice all the produce and then stir in the wheat grass packet.
Serves: 1

I was excited when I saw all these yummy ruby red beets at Whole Foods, but I was still wondering what they would taste like when I juiced them.  The only time I've ever had beets was when they were pickled and clearly anything pickled takes on a different taste.  I was definitely surprised last night when I juiced them because the flavor was rich and bright and delicious.

Sweet Beet Juice

  • 1 large beet
  • 3 large carrots
  • 1 orange, peel removed
  • 1 small fuji apple

  • Juice and ENJOY!
Serves: 1

Yes, I know I posted a green juice yesterday, but I promise this one is different.  I call this one green machine because it is a great vehicle for spinach and is sweet enough that you will probably not even notice.  If you are intimidated by green juices then I would suggest you give this one a try before you miss out on all the benefits of greens.

Green Machine Juice

  • 2 small apples
  • 1/2 cup green grapes
  • 6 cups baby spinach
  • 1 pear
  • 1 cucumber

  • Juice everything together and enjoy.  This makes one very large serving or two regular size servings.

You'll love this juice!  Not only is it packed with all sorts of stuff but it's refreshing and tasty.  This juice makes one pretty large serving and works great as a snack or addition to a small lunch.  This green juice is loaded with all things green.

Green Monster Juice

  • 5 celery ribs
  • 2 cups baby spinach
  • 2 cups baby kale
  • 1/2 cup green grapes
  • 1 green apple
  • 1/2 cucumber
  • 1 tablespoon lime juice
  • small handful parsley (optional)

  • Juice all the vegetables then stir in the lime juice.
Enjoy!

Here is THE BEAST.  I love my Hamilton Beach Big Mouth Juicer!

This recipe for carrot juice is really simple because there are only a couple ingredients and it is a great introductory juice if you are new to juicing.  You can make this spicier or sweeter by adding more ginger or more apple.  The idea with juicing is that it is a good vehicle for getting more vegetables into your diet, so always be sure that if you are watching your sugar or trying to lose weight that you have way more veggies than fruit in your juice.

Carrot Juice

  •  4 large carrots washed, cleaned, greens removed
  • 1/2 fuij apple (with the core, peel, and seeds)
  • 1 inch ginger root (or to taste)*
  • 1 tablespoon lime juice

  • Juice your carrots first.
  • Next add your apple.
  • Add the ginger root. *Start with a little then add more to your liking.  Ginger can pack a big hit.

Your results will look something like this.  Remove the catcher cup and stir in the lime juice.

This juice makes enough for one juice as a snack.  You can always double this if you are looking to use it as more of a meal replacement or share with someone.

Enjoy!
